Story Coffee's roots trace to Don and Carissa Niemyer’s unconventional lifestyle in a 99-square-foot Volkswagen Rialta RV.
"At the time, it was just me, my wife, and our two daughters," Don recalls. "We were always lean minimalists, but this really put it on super drive." They lived in that space for four years, maximizing small areas—a skill that defined Story Coffee.
"By necessity, we got good at using a small space creatively," Don says. "When you have to fit four people into 99 square feet, you learn to strip away the non-essential and focus on what truly matters."
That lesson became the business's philosophy: a small, intentional coffee shop where every element is carefully considered.
Minimalism wasn't just about space but life, work, and hospitality. Instead of overcomplicating, they focused on what mattered, bringing that into coffee.

As Story Coffee moves into its next decade, Don is focused on building systems for smooth operations without his constant presence.
Operating a business in Acacia Park, they see the reality of homelessness daily. They’re involved in cleanup initiatives, working with the city on better public bathroom access, and figuring out how to contribute."
